The differences between White Pepper and Black Pepper - Products from Vietnam Both white and black peppercorns are the fruit of the pepper plant. However, black ones are sun-dried and picked when almost ripe which turns the outer layer black. White peppercorns are produced by removing the outer layer before and after drying which leaves the inner seed.
